Vegan Peanut Butter Muffins
Peanut butter is full of protein and so yummy! These muffins are super moist and they are vegan too. Don't over-bake the muffins or they will dry out.
Peanut Butter Muffins
- 2 Cups Whole Wheat Flour
- 1 Tbsp Baking Powder
- 1/2 tsp Salt
- 1 Cup Peanut Butter
- 1/2 Cup Brown Sugar
- 1/2 Cup Oat Milk
- 1 tsp Vanilla
- 1/2 Cup Coconut Yogurt
Preheat the oven to 375°. Get you muffin tin and grease the cups or use paper liners.
Mix the flour, baking powder, and salt together.
Cream together the peanut butter and brown sugar. Add the oat milk, vanilla, and yogurt and mix together.
Fold the dry ingredients into the wet. Don't overmix the batter. Bake for approximately 15-18 minutes. Do the toothpick test and let cool for about 15 minutes.
