Cashew Cheese

It seems so weird, but I promise cashews make a very nice vegan cheese. Don't skip the soaking step and use a good blender. I like to use my Vitamix for this recipe. 

Cashew Cheese


INGREDIENTS

  • 1 Cup Raw Cashews
  • 2 Cloves Garlic
  • 1/4 Cup Nutritional Yeast
  • 3/4 Cup Oat Milk
  • 1 Jalapeno
  • 2 Tbsp Lemon Juice
  • 1/2 Tsp Turmeric
  • 1/2 Tsp Paprika
  • 1 Tsp Miele Mustard
  • Salt and Pepper

INSTRUCTIONS

Soak the cashews in 2 cups of water for 2 - 3 hours. Once the cashews have finished soaking, drain and put in your blender. 

Add the remaining ingredients to the blender and puree until smooth. Add additional oat milk if you would like a thinner consistency.
