Potato & Cauliflower Mash


  • 5-7 Potatoes (Farmer's market is best)
  • Small Cauliflower Head
  • 2 Tbsp Vegan Butter
  • 3/4 Cup Oat Milk
  • 2 tsp Salt
  • 1 tsp Pepper
  • 1/4 tsp Thyme


Boil potatoes and cauliflower in the same large pot until the potatoes are soft when tested with a fork. Drain the potatoes and cauliflower and put back into the pot. Grab your immersion blender and get to work. I did not peel my potatoes because they were fresh from the farmer's market and the skin is loaded with nutrients. Add in the oat milk once you have a nice mash and the vegan butter. Finish with the seasonings.
