Healthy and Yummy!

I found this soup while reading some blogs today and decided on the spot to make it immediately. The soup is absolutely delicious. I decided to roast the carrots, potatoes, and garlic cloves (skin-on)  in the oven with a little olive oil to add a flavor punch as the author suggested. The garlic was smushy and lovely after roasting, so I simply used the immersion blender to emulsify it into the soup. Check out the Veg Space for this lovely recipe. And whatever you do, don't shy away from adding in the dairy-free milk and lemon, it truly made the flavor!
