Mason Jar Salads…

It's January...time to re-focus after eating too many Christmas cookies! I decided that salads served in bowls was getting boring, so I tried the mason jar salad craze. I made my salad with black beans, garbanzo beans, cucumbers, tomatoes, celery, baby carrots, yellow peppers, arugula, and spinach. I made up about five jars and they kept well in the fridge for two days. The best part was how the dressing coated every inch of the salad due to the vigorous shaking prior to eating. I made my dressing using a bit of balsamic vinegar, olive oil, salt, and pepper. I ate mine right out of the jar, but Brian chose to pour it onto a plate. Not as much fun, Brian!
