Taste Your Food

Lesson 3

You probably already know the importance of tasting your food as you cook, but sometimes we get so involved in following a recipe that we forget to taste what we are making. I like to play with recipes, trying new flavors, and tweaking as I cook. If you are just getting started, you are probably following your recipe more closely, which is fine, but don't blindly add spices if your gut tells you it might not taste good.  For example, since I use Kosher Salt, I typically end up adding more salt than a recipes calls for...Or if I know that my family doesn't like cashews, I might substitute almonds or walnuts. You need to develop a feel for the flavor profile you are creating when working with a recipe. cuisine’s flavor profile is how those things are used to produce the dishes of that cuisine. For cuisine purists, it’s how they choose the elements that will go into a particular dish. But it also how locavores would construct a dish as well.
